Impossible Cheeseburger Pie
1 lb. ground beef
1 cup chopped onion
(Note: We aren't that big on onion around here, so we use just a 1/4 tsp. minced onion and it is still quite tasty. ;) )
1/2 tsp. salt
1 cup shredded Cheddar cheese
1/2 cup Original Bisquick
1 cup milk
2 eggs
(Note: We double the last three ingredients to make the dish more filling. Also, if you don't have Bisquick, you can make your own self-rising flour by adding 1 1/2 tsp, baking powder and 1/2 tsp. salt for every cup of flower you use.)
Heat oven to 400*. Grease 9" pie plate.
(Note: We use cooking spray and put the ingredients in a 9" x 13" baking dish.)
Cook ground beef and onion until beef is brown; drain. Stir in salt. Spread in pie plate; sprinkle with cheese.
Stir remaining ingredients until blended. Pour into pie plate.
Bake about 25 min. or until knife inserted in center comes out clean.
For the side dish...here's a recipe we came up with. :)
Baked Beans
2 cans vegetarian beans
about a Tbsp. of bacon bits
Let simmer for 15 min. stirring as needed. Next add...
1/4 cup ketchup
1 tsp. mustard
1/4 tsp. minced onion
1/3 cup brown sugar
Stir and and let simmer 5 min. more to let flavors blend.
Brownies
1/4 cup nuts
1/2 cup vanilla chips
1/2 cup chocolate chips
1/2 cup sugar
1 cup brown sugar
1 1/2 cup flour
1/2 cup cocoa
1 tsp salt
1 tsp. vanilla
2/3 cup oil
3 eggs
Combine ingredients and pour into a greased 9" x 13 " pan. Bake at 350* for 27-32 min.
